Bengan aur Loki key sabzi (Eggplant and Bottle gourd Mixed Vegetable)

This is my own invented recipe. These days I am on fiber diet and mostly I try to eat fruits and vegetables. Since Eggplant is a good source of fiber i.e. 100gms of egg plant contains 3 gms of fiber. So I decided to have eggplant (or brinjal). I also had a bottle gourd in hand so decided to combine these two vegetables. And it really turned great. The recipe contains only 3 table spoons of oil and is very simple and easy to make.

Eggplant and Bottle gourd

INGREDIENTS:

Eggplant                         1 small (thinly sliced)

Bottle gourd                     1/2 (thinly sliced)

Oil                                  3 tbsp

Salt                                1/2 tsp

Red Chilli Powder             1/2 tsp

 

METHOD:

  1. 1. Heat oil in a pan at medium flame.
  2. 2. Put both vegetables in it.
  3. 3. Add salt and red chilli powder and cover with lid.
  4. 4. A|t very low flame leave the vegetables for 1/2 hour or till tender (keep stirring the vegetable after every 5 to 7 mins)
  5. 5. Serve hot.

 

SERVING TIP: You can serve the vegetable with chapati or bread.

SERVES: 1 to 2 persons
