Banana Upside Down Cake

 

I was just searching for some new recipes when I came across this one, Banana upside down cake. It was a totally new thing for me as I have always heard about pineapple upside down cake. I searched for different versions of the recipe and made a mine version of the recipe.

In past, my experience with pineapple upside down cake has never turned good. So I wasn’t sure if this time things will work or not. But fortunately to my surprise the cake turned awesome.

Here is the recipe

 

INGREDIENTS

FOR BANANA BASE

Brown Sugar                                         4 tbsp

Butter                                                     2 tbsp

Bananas                                                3 ripe bananas, cut in to slices.

FOR CAKE:

White Sugar                                          3/4 cup

Unsalted Butter                                     3/4 cup

Eggs                                                      3

Vanilla                                                    few drops

Bananas                                                 3 mashed.

Milk                                                         4 tblsp

Flour                                                       1 1/2 cups

Baking powder                                       1 tsp

 

METHOD:

Pre heat oven at 180 degrees

FOR BANANA BASE:

Heat a pan at medium heat.

Add Butter and Brown sugar, turning the flame to very low.

 

Let the butter and brown sugar melt.

 

Grease an 8 to 9 inch pan with butter (normally I grease my pans with oil, but this time I used butter)

 

Arrange sliced bananas in the pan like shown in the picture.

Pour melted Brown sugar Mixture over the bananas and set a side.

FOR CAKE:

Beat butter and sugar together, with an electric mixer or hand mixer, until well combined.

 

Add eggs one by one and vanilla,  and continue beating.

In a separate bowl sift together flour and baking powder.

Fold dry ingredients in to liquid ingredients and milk while folding.

Fold in mashed bananas.

Pour the batter in to already prepared pan.

Bake for 30 to 40 mins.

Take out the pan and leave for 10 mins, until it gets a little bit cool.

Take out the cake carefully in a platter.

Enjoy with tea/coffee.

SERVING IDEAS:

You can serve with cream cheese frosting, or fresh whipped cream.

VARIATIONS:

You can use brown sugar instead of white sugar in cake recipe.

You can use wholewheat instead of flour.

You can also use half brown and half white sugar in cake recipe.
